✨ wine.spec_sheet

Hailing from the wind-swept Orkney Islands, Highland Park is steeped in Viking lore and distilling history dating back to 1798, when the legendary smuggler Magnus Eunson operated an illicit still on the site. The 'Full Cask' No 66 represents a rare departure from the distillery's signature sherry-cask style, having been matured exclusively in a single ex-bourbon barrel. Orkney's unique terroir shines through its treeless, heather-dense peat, which is hand-cut from the Hobbister Moor and used to kiln the barley. This imparts a delicate, aromatic peat smoke that beautifully intertwines with the bourbon cask's influence of creamy vanilla, bright citrus, toasted coconut, and wild honey.
