✨ wine.spec_sheet

Highland Park, nestled on the windswept Orkney Islands of Scotland, is one of the northernmost distilleries in the world, deeply steeped in Viking heritage and folklore. Founded in 1798 by Magnus Eunson, a direct descendant of Viking pioneers, the distillery famously uses aromatic peat cut from the nearby Hobbister Moor. This peat, rich in heather, infuses the malt with a distinct, sweet floral smoke rather than the heavy medicinal peat of the Islay region. This specific expression, matured in a single hogshead cask (Cask No 8), showcases the pure, undiluted character of Orkney single malt. The maritime climate, marked by fierce winds and temperate winters, allows for a slow, even maturation, resulting in a complex spirit where gentle peat smoke, heather honey, dried fruits, and coastal brine harmoniously intertwine.
