Hailing from the wind-swept Orkney Islands, Highland Park's Valfather represents the dramatic culmination of the distillery's Viking Legend trilogy. Named after Odin, the Norse 'Father of the Slain,' this single malt pays homage to the deep Viking heritage of Orkney. Unlike typical Islay malts, Highland Park utilizes local peat cut from Hobbister Moor, which is infused with decomposed heather, imparting a distinctively sweet, floral smokiness. Valfather is crafted using a higher proportion of peated malt than Highland Park's standard releases and is matured primarily in refill casks. This specific maturation allows the complex, aromatic peat smoke and bright fruit notes—reminiscent of sweet apple, pear, and toasted spices—to take center stage without being overshadowed by heavy oak.
