Holyrood Distillery's 'Full Cask' series represents a bold renaissance of Edinburgh's distilling heritage, which had lain dormant for nearly a century before the distillery's founding. This release highlights the use of Golden Promise barley—a legendary, low-yielding heritage variety that dominated the Scotch whisky industry in the mid-20th century, prized for its rich, oily, and robust sweet malt character. Distilled in Holyrood's bespoke stills, the spirit is matured entirely in a first-fill Oloroso sherry hogshead. This intense maturation imparts deep notes of dried dark fruits, toasted nuts, baking spices, and a luxurious, resinous oak complexity, marrying the historic Lowland style with bold, experimental craft.
