This exceptional single malt from Edinburgh's Holyrood Distillery represents a bold revival of historic distilling in the Scottish Lowlands. Crafted from Golden Promise—a legendary heritage barley variety celebrated for its rich, nutty, and oily texture that dominated Scottish distilling in the mid-20th century—this spirit undergoes a meticulous fermentation process using selected specialty yeasts. The spirit is then matured in a first-fill Oloroso sherry hogshead (Cask No. 230). This specific maturation vessel infuses the robust Lowland spirit with intense notes of dried figs, dark chocolate, toasted walnuts, and warm baking spices, marrying the heritage grain's inherent sweetness with the deep, oxidative complexity of traditional Spanish sherry wood.

Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century.
