Holyrood Distillery utilizes Golden Promise, a legendary heritage barley variety prized for its robust, oily texture and sweet, bready flavor profile, which was highly favored in the mid-20th century before being largely replaced by higher-yielding modern varieties. Matured entirely in a first-fill Oloroso sherry hogshead (Cask No. 233), this spirit marries the rich, cereal-forward character of the heritage grain with the intense dried fruit, dark chocolate, and roasted nut notes derived from the sherry-seasoned wood. The result is a deeply complex, full-bodied Lowland single malt that honors traditional raw materials while pushing the boundaries of modern flavor exploration.

Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century.
