Holyrood Distillery's Single Malt 'Full Cask' No 234 represents a historic revival of distilling in Edinburgh, a city once teeming with breweries and distilleries in the 18th and 19th centuries. This specific release highlights the legendary Golden Promise barley—a heritage variety famed for its rich, oily texture and sweet, nutty flavor profile, which was the darling of Scottish distilling in the mid-20th century before being largely replaced by higher-yielding modern varieties. Matured in a first-fill Oloroso sherry hogshead, this spirit marries the robust, cereal-forward character of the Lowland spirit with the deep, dried-fruit, and spice notes imparted by the sherry-seasoned European oak. The result is a complex, full-bodied single malt that bridges Edinburgh's rich industrial heritage with modern experimental distilling.

Holyrood Distillery blev grundlagt i 2019 af Rob og Kelly Carpenter i samarbejde med den tidligere Macallan-masterdistiller David Robertson. Etableringen markerede en historisk milepæl, da produktionen af single malt whisky dermed vendte tilbage til det centrale Edinburgh efter næsten et århundredes fravær. Destilleriet har til huse i en ombygget jernbanebygning fra 1830'erne, klos op ad Holyrood Park i det skotske Lowlands, og drives ud fra en progressiv filosofi, hvor smagen altid er i absolut centrum.
