Holyrood Distillery's 'Full Cask' series represents a bold, modern exploration of Lowland single malt whisky, bringing distilling back to Edinburgh's historic heart. This peated expression, matured in a first-fill bourbon barrel, showcases the distillery's innovative spirit. While Lowland whiskies are traditionally known for being light, grassy, and unpeated, Holyrood challenges these conventions by introducing heavily peated malted barley into their mash bills. The use of a first-fill bourbon cask infuses the smoky, phenolic spirit with rich layers of vanilla, toasted coconut, and sweet caramel, creating a dramatic tension between coastal peat smoke and sweet American oak. This represents an exciting chapter in Edinburgh's rich brewing and distilling heritage, which dates back centuries to the monastic breweries of Holyrood Abbey.

Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century. Situated in a converted 1830s railway goods building adjacent to Holyrood Park in Scotland's Lowlands, the distillery embraces a progressive, flavor-led production philosophy. Driven by extensive experimentation with specialty and heritage barley varieties like Golden Promise, diverse brewing yeasts, and tailored cask regimens, Holyrood pushes traditional boundaries. In addition to producing nuanced, complex single malt whiskies, the craft distillery is celebrated for its distinctive artisanal gins, rums, and innovative botanical spirits.
