✨ Technical Specifications

Holyrood Distillery, located in the heart of Edinburgh, represents a bold, flavor-first renaissance of urban distilling in the Scottish Lowlands. This specific release, the Single Malt Peated 1st Fill Bourbon Barrel 'Full Cask' No 636, showcases their innovative approach to peat and wood interaction. Rejecting the historically light and grassy stereotype of Lowland whiskies, Holyrood embraces heavy, specialty malts and experimental yeasts. Distilled using peated malted barley and matured entirely in a single first-fill ex-Bourbon barrel, this expression highlights the marriage of sweet, creamy vanilla and toasted coconut from the American white oak with a robust, earthy peat smoke. The historic 180-year-old railway transit building where it is crafted adds a layer of industrial heritage to this modern, deeply complex liquid.

🍾 About the Producer

Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century. Situated in a converted 1830s railway goods building adjacent to Holyrood Park in Scotland's Lowlands, the distillery embraces a progressive, flavor-led production philosophy. Driven by extensive experimentation with specialty and heritage barley varieties like Golden Promise, diverse brewing yeasts, and tailored cask regimens, Holyrood pushes traditional boundaries. In addition to producing nuanced, complex single malt whiskies, the craft distillery is celebrated for its distinctive artisanal gins, rums, and innovative botanical spirits.
