This specific release, the Single Malt Peated 1st Fill Bourbon Barrel 'Full Cask' No 636, showcases their innovative approach to peat and wood interaction. Rejecting the historically light and grassy stereotype of Lowland whiskies, Holyrood embraces heavy, specialty malts and experimental yeasts. Distilled using peated malted barley and matured entirely in a single first-fill ex-Bourbon barrel, this expression highlights the marriage of sweet, creamy vanilla and toasted coconut from the American white oak with a robust, earthy peat smoke. The historic 180-year-old railway transit building where it is crafted adds a layer of industrial heritage to this modern, deeply complex liquid.

Holyrood Distillery blev grundlagt i 2019 af Rob og Kelly Carpenter i samarbejde med den tidligere Macallan-masterdistiller David Robertson. Etableringen markerede en historisk milepæl, da produktionen af single malt whisky dermed vendte tilbage til det centrale Edinburgh efter næsten et århundredes fravær. Destilleriet har til huse i en ombygget jernbanebygning fra 1830'erne, klos op ad Holyrood Park i det skotske Lowlands, og drives ud fra en progressiv filosofi, hvor smagen altid er i absolut centrum.
