Representing a bold departure from the historically light, triple-distilled style of the Scottish Lowlands, Holyrood Distillery’s peated single malt expressions bring a smoky intensity back to Edinburgh's urban distilling landscape. This expression, matured in a first-fill Bourbon barrel, showcases the distillery's innovative spirit. By utilizing heavily peated malted barley and fermenting with specialty yeasts, Holyrood crafts a robust spirit that marries earthy, coastal peat smoke with the sweet, creamy vanilla and charred oak influences of fresh American white oak. The distillery itself sits in a beautifully restored railway transit building, echoing Edinburgh's rich industrial and brewing heritage, where water from the historic Salisbury Crags aquifer once fed legendary local breweries.

Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century. Located in a restored 180-year-old railway transit building in the Lowlands, the distillery rejects traditional production constraints in favor of a flavor-forward philosophy. Holyrood is renowned for its experimental use of heritage barley varieties like Golden Promise, specialty roasted malts, and diverse beer yeasts, creating highly complex spirits. Their signature single malt whiskies, often matured in first-fill Oloroso sherry hogsheads, showcase a rich, robust character that redefines modern Lowland distilling.
