Holyrood Distillery's 'Full Cask' No 640 represents a bold chapter in Edinburgh's distilling revival. While the Lowlands are historically celebrated for light, grassy, and unpeated spirits, Holyrood challenges this convention with a heavily peated single malt matured in a first-fill Bourbon barrel. This expression showcases the distillery's flavor-first philosophy, marrying the intense, earthy smoke of peated malted barley with the sweet, creamy vanilla and toasted oak notes imparted by the fresh American oak. The historic railway transit building where it is crafted echoes with the industrial heritage of Edinburgh, providing an atmospheric backdrop to a spirit that bridges ancient Scottish traditions with contemporary, boundary-pushing distilling techniques.

Holyrood Distillery blev grundlagt i 2019 af Rob og Kelly Carpenter i samarbejde med den tidligere Macallan-masterdistiller David Robertson. Etableringen markerede en historisk milepæl, da produktionen af single malt whisky dermed vendte tilbage til det centrale Edinburgh efter næsten et århundredes fravær. Destilleriet har til huse i en ombygget jernbanebygning fra 1830'erne, klos op ad Holyrood Park i det skotske Lowlands, og drives ud fra en progressiv filosofi, hvor smagen altid er i absolut centrum. Holyrood udfordrer de traditionelle rammer gennem dybdegående eksperimenter med historiske og særlige bygsorter som Golden Promise, alsidige gærtyper og nøje skræddersyede fadlagringer. Ud over at skabe nuancerede og komplekse single malt-whiskyer er det innovative mikrodestilleri også anerkendt for sine karakterfulde, håndværksmæssige gin, rom og botaniske spiritusser.
