Located in the heart of the historic Lowlands, Holyrood revived single malt production in the Scottish capital after a century-long hiatus following the closure of the Grange Distillery in 1925. This peated expression, matured in a first-fill bourbon barrel, marries the intense, smoky profile of peated malt with the sweet, vanilla-rich influence of fresh American oak. Historically, Edinburgh was famous for its 'Charmed Circle' of breweries and distilleries that drew from the ancient volcanic aquifers beneath the city. Holyrood honors this legacy by experimenting with heritage barleys and specialty yeasts, crafting a spirit that is both a nod to the past and a pioneering step forward. Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century.
