Hailing from the heart of Edinburgh, this single malt represents a bold departure from traditional Lowland whisky profiles. Holyrood Distillery, revived in a historic railway transit building, champions a flavor-first philosophy that places yeast and malt selection at the forefront of creation. This expression highlights the use of Pinnacle yeast, a strain celebrated for its clean fermentation profile that allows the nuanced, cereal-forward character of the heritage malted barley to shine. Matured in a single cask (No. 600), this spirit captures the essence of Edinburgh's rich brewing and distilling heritage, offering a contemporary reimagining of classic Scottish distilling where yeast is treated as a primary driver of flavor rather than a mere catalyst.

🍾 wine.about_producer

Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century. Located in a restored 180-year-old railway transit building in the Lowlands, the distillery rejects traditional production constraints in favor of a flavor-forward philosophy. Holyrood is renowned for its experimental use of heritage barley varieties like Golden Promise, specialty roasted malts, and diverse beer yeasts, creating highly complex spirits. Their signature single malt whiskies, often matured in first-fill Oloroso sherry hogsheads, showcase a rich, robust character that redefines modern Lowland distilling.
