Representing a bold frontier in spirits production, this release from Edinburgh's Holyrood Distillery showcases their radical, flavor-first philosophy. By fermenting 100% malted barley with sake yeast rather than traditional distiller's yeast, Holyrood bridges the gap between Japanese brewing artistry and Scottish distilling heritage. This experimental fermentation introduces an abundance of stone fruit, melon, and delicate floral esters alongside a distinct, savory umami backbone. Cask No 894 captures this unique chemical synergy in a single, unadulterated expression, offering a fascinating glimpse into how yeast selection can fundamentally redefine the Lowland single malt style.

🍾 wine.about_producer

Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century. Located in a restored 180-year-old railway transit building in the Lowlands, the distillery rejects traditional production constraints in favor of a flavor-forward philosophy. Holyrood is renowned for its experimental use of heritage barley varieties like Golden Promise, specialty roasted malts, and diverse beer yeasts, creating highly complex spirits. Their signature single malt whiskies, often matured in first-fill Oloroso sherry hogsheads, showcase a rich, robust character that redefines modern Lowland distilling.
