Part of Anselme Selosse's highly coveted single-vineyard (lieu-dit) collection, 'Sous le Mont' (often referred to as Sous Mont) is a singular Blanc de Noirs hailing from the historic slopes of Mareuil-sur-Aÿ. The vineyard sits on a steep, east-facing hillside characterized by chalky soils rich in calcium carbonate and magnesium, which imparts a distinctive, almost salty minerality to the wine. Anselme applied his signature Burgundian philosophy here, utilizing wild yeast fermentation in oak casks and a perpetual reserve system to build incredible depth. The result is an extraordinarily complex, vinous Champagne that balances oxidative complexity with a structured, savory core, showcasing notes of exotic spices, red fruits, and toasted nuts.
