Maison Jaffelin's Blanc de Blancs Brut is crafted in the historic, subterranean 12th-century cellars of the Chapter of Notre-Dame in Beaune. Utilizing the traditional method (méthode traditionnelle), this sparkling wine captures the vibrant, limestone-driven terroir of Burgundy. The wine undergoes its secondary fermentation and extended lees aging in these cool, damp medieval cellars, which provide the perfect natural temperature control. The result is a sparkling wine of remarkable precision, characterized by a fine, persistent mousse, delicate aromas of white blossoms, fresh citrus, and a subtle toasted brioche undertone that reflects the house's commitment to artisanal, gravity-flow winemaking.

Founded in 1816 by brothers Charles and Henri Jaffelin, Maison Jaffelin is celebrated as the smallest among Burgundy's historic négociant houses, located in the ancient center of Beaune. The estate ages its wines in remarkable 12th-century vaulted cellars originally built by the Canons of the Collégiale Notre-Dame. Operating on an artisanal, small-batch scale, the house employs gentle, gravity-fed vinification to preserve the pure expression and distinctive character of each climats across the Côte de Nuits and Côte de Beaune. Jaffelin is renowned for its elegant, terroir-driven Pinot Noir and Chardonnay selections, ranging from the emblematic Cuvée des Chanoines to distinguished Premier and Grand Cru bottlings, alongside fine Crémant de Bourgogne.
