✨ Technical Specifications
Maison Jaffelin's Blanc de Blancs Brut is crafted in the historic, subterranean 12th-century cellars of the Chapter of Notre-Dame in Beaune. Utilizing the traditional method (méthode traditionnelle), this sparkling wine captures the vibrant, limestone-driven terroir of Burgundy. The wine undergoes its secondary fermentation and extended lees aging in these cool, damp medieval cellars, which provide the perfect natural temperature control. The result is a sparkling wine of remarkable precision, characterized by a fine, persistent mousse, delicate aromas of white blossoms, fresh citrus, and a subtle toasted brioche undertone that reflects the house's commitment to artisanal, gravity-flow winemaking.
🍾 About the Producer
Established in 1816 by brothers Charles and Henri Jaffelin, Maison Jaffelin holds the distinction of being the smallest of the historical négociant houses in Beaune. Uniquely, it remains one of the rare houses actively vinifying inside the medieval core of Beaune, operating out of vaulted twelfth-century cellars originally belonging to the Collégiale Notre-Dame. Now part of the Boisset Collection family of estates, Jaffelin's winemaking has been guided since 2011 by oenologist Marinette Garnier. Garnier crafts micro-cuvées using bespoke, small-capacity wooden vats and traditional vertical pressing, prioritizing gentle extraction and native fermentations. Sourcing pristine fruit across the Côte de Nuits, Côte de Beaune, and Côte Chalonnaise, the house emphasizes transparent terroir character across classical limestone and clay-limestone soils. Benchmark releases include regional expressions under the Les Chapitres de Jaffelin tier, singular Premier Cru bottlings such as Beaune Premier Cru Les Cent Vignes, and traditional-method Crémants de Bourgogne vinified with minimal intervention and low dosage.
