Named in honor of the Canons of Notre-Dame (Chanoines), who constructed the magnificent 12th-century cellars in Beaune where Maison Jaffelin still ages its wines, this Cuvée des Chanoines is a vibrant tribute to Burgundy's monastic winemaking heritage. Crafted from Chardonnay grapes sourced from selected vineyards across Burgundy, the wine is vinified using traditional gravity-flow techniques to preserve its delicate aromatic profile. It undergoes fermentation and aging in a combination of stainless steel vats and oak barrels to strike a harmonious balance between fresh, crisp orchard fruit and a subtle, creamy complexity. The result is a classic expression of regional Bourgogne Chardonnay, reflecting both historical depth and modern precision.
