Les Chapitres de Jaffelin is a tribute to the historic Chapter of Notre-Dame, the medieval canons who once owned the 12th-century cellars in Beaune where Jaffelin wines are still aged today. This red Burgundy is crafted to showcase a vibrant, fruit-forward expression of Pinot Noir. Utilizing traditional gravity-flow methods in the cellar, the winemakers minimize agitation to preserve the delicate red berry aromas and soft, approachable tannins. Founded in 1816 by brothers Charles and Henri Jaffelin, Maison Jaffelin is celebrated as the smallest among Burgundy's historic négociant houses, located in the ancient center of Beaune. The estate ages its wines in remarkable 12th-century vaulted cellars originally built by the Canons of the Collégiale Notre-Dame. Operating on an artisanal, small-batch scale, the house employs gentle, gravity-fed vinification to preserve the pure expression and distinctive character of each climats across the Côte de Nuits and Côte de Beaune. Jaffelin is renowned for its elegant, terroir-driven Pinot Noir and Chardonnay selections, ranging from the emblematic Cuvée des Chanoines to distinguished Premier and Grand Cru bottlings, alongside fine Crémant de Bourgogne.
