The vineyard's soils, characterized by a high concentration of limestone mixed with clay and gravel, impart a distinct, stony minerality and structural power to the wine. Historically, these slopes were cultivated by Cistercian monks who recognized the unique microclimates of the Côte de Beaune centuries ago. Jean-Marc Pillot vinifies this Chardonnay with indigenous yeasts and ages it in French oak barrels, carefully managing the proportion of new wood to preserve the vineyard's energetic, mineral-driven core while coaxing out a rich, textured palate of orchard fruits, white flowers, and toasted brioche.
