Historically, the village of Chassagne-Montrachet was renowned primarily for its Pinot Noir rather than its now-famous Chardonnay, a legacy that the Pillot family honors with meticulous care. This wine is sourced from carefully managed parcels featuring classic clay-limestone soils. Pillot employs traditional vinification with partial or total destemming, followed by aging in French oak barrels with a very low proportion of new oak. Domaine Jean-Marc Pillot is an esteemed family-run wine estate rooted in Chassagne-Montrachet, situated in Burgundy's celebrated Côte de Beaune. Taking the reins in 1991 and now joined by his son Antonin, Jean-Marc represents the latest generation to steward the family's historic parcels with a philosophy focused on organic practices, careful canopy management, and minimal intervention in the cellar.
