The Kavalan NV Assortment Case offers a curated journey through the pioneering spirit of Taiwan's premier distillery. Located in Yilan County, where the cold, pristine meltwaters of the Snow Mountain range meet the intense subtropical heat of the plains, Kavalan has redefined the spirits world since its founding in 2005. This unique climate dramatically accelerates the interaction between the spirit and the wood, achieving in just a few years a depth of flavor that would take decades in cooler climates—a phenomenon known as 'subtropical maturation.' This assortment case typically showcases Kavalan's mastery of diverse cask finishes, ranging from rich ex-sherry and port casks to innovative ex-wine casks, reflecting the distillery's signature tropical fruit profile, complexity, and velvety texture.

Kavalan Distillery blev grundlagt i 2005 af King Car Group under ledelse af grundlægger Tien-Tsai Lee og er beliggende i Yuanshan i Yilan-distriktet på Taiwan. Destilleriet er opkaldt efter det oprindelige Kavalan-folk fra Yilan-sletten og var pioner inden for taiwansk single malt whisky i verdensklasse, skabt på mineralrigt smeltevand fra den nærliggende Snow Mountain-bjergkæde.
