Crafted in the pristine, subtropical environment of Yilan County, Taiwan, this single malt whisky represents the pinnacle of Kavalan's innovative maturation techniques. Utilizing the pure, mineral-rich meltwater of the nearby Snow Mountain range, the spirit undergoes an accelerated aging process driven by Taiwan's intense heat and humidity. This unique climate coaxes deep wood extraction in a fraction of the time required in traditional whisky-producing regions. Aged for eight years in a hand-selected brandy cask, this expression beautifully marries Kavalan's signature tropical fruit distillate with the luxurious, warming notes of French brandy. The result is a remarkably complex spirit, rich with aromas of dried stone fruits, dark honey, and warm baking spices, offering a sensory journey that reflects the bold, pioneering heritage of Taiwanese distilling.

Kavalan blev grundlagt i 2005 af Tien-Tsai Lee fra King Car Group og er Taiwans banebrydende single malt-destilleri. Destilleriet ligger på den frodige alluviale slette i Yuanshan-distriktet i Yilan County, flankeret af Stillehavet og Xueshan-bjergkæden (Snow Mountain). Til mæskningen udnyttes det rene, mineralrige smeltevand fra bjergene. Kavalan destillerer på traditionelle kobberkedler, og stedets terroir præges markant af det nordøstlige Taiwans intense subtropiske luftfugtighed og markante temperatursvingninger. Dette ekstreme klima – udviklet i tæt samarbejde med den afdøde fadmodningsekspert Dr. Jim Swan – fremskynder udtrækket fra fadet og iltningen, så års lagring koncentreres i hurtige cyklusser.
