Kavalan's Distillery Reserve Peaty Cask is a highly coveted, distillery-exclusive release that highlights the innovative spirit of Taiwan's pioneer whisky maker. Located in Yilan County, Kavalan capitalizes on the region's intense subtropical heat to accelerate wood extraction, creating incredibly complex spirits in a fraction of the time required in cooler climates. For this expression, the spirit is matured in casks that previously held peated whisky. This imparts a subtle, elegant layer of earthy smoke and maritime peat over Kavalan's signature tropical fruit profile, which is rich with notes of ripe mango, pineapple, and creamy coconut. Crafted using pure, mineral-rich meltwater from the Snow Mountain range, this single malt beautifully marries Taiwanese warmth with a whisper of classic peat smoke.

Kavalan blev grundlagt i 2005 af Tien-Tsai Lee fra King Car Group og er Taiwans banebrydende single malt-destilleri. Destilleriet ligger på den frodige alluviale slette i Yuanshan-distriktet i Yilan County, flankeret af Stillehavet og Xueshan-bjergkæden (Snow Mountain). Til mæskningen udnyttes det rene, mineralrige smeltevand fra bjergene. Kavalan destillerer på traditionelle kobberkedler, og stedets terroir præges markant af det nordøstlige Taiwans intense subtropiske luftfugtighed og markante temperatursvingninger. Dette ekstreme klima – udviklet i tæt samarbejde med den afdøde fadmodningsekspert Dr. Jim Swan – fremskynder udtrækket fra fadet og iltningen, så års lagring koncentreres i hurtige cyklusser. Gennem et omhyggeligt fadprogram, der navnlig omfatter pionerarbejdet med Shave, Toast and Re-char-processen (STR) samt krydrede sherry- og bourbonfade, opnår Kavalan en exceptionel fylde, intens tropisk frugtkarakter og strukturel elegance.
