Kavalan's Solist Fino Sherry Cask represents a spectacular marriage of Taiwanese distilling innovation and traditional Spanish winemaking heritage. Distilled at the King Car distillery in Yilan County, this single malt is aged in exquisite Fino Sherry butts. Fino, known for its dry, yeast-influenced profile, imparts a unique complexity to the spirit. The local subtropical climate, characterized by intense heat and humidity, acts as an accelerator, forcing the spirit deep into the oak pores and extracting rich flavors at a rate far exceeding traditional cool-climate maturation. The water used is drawn from the pristine, mineral-rich springs of the nearby Snow Mountain, ensuring a clean and smooth spirit base. This specific single cask bottling, matured under these extreme conditions and bottled in 2017, showcases a mesmerizing profile of rich dry fruits, toffee, and complex nuttiness balanced by a delicate mineral salinity.

Kavalan Distillery blev grundlagt i 2005 af King Car Group under ledelse af grundlægger Tien-Tsai Lee og er beliggende i Yuanshan i Yilan-distriktet på Taiwan. Destilleriet er opkaldt efter det oprindelige Kavalan-folk fra Yilan-sletten og var pioner inden for taiwansk single malt whisky i verdensklasse, skabt på mineralrigt smeltevand fra den nærliggende Snow Mountain-bjergkæde.
