Manzanilla, a dry Fino-style sherry aged in the coastal town of Sanlúcar de Barrameda, imparts a distinct maritime, briny character to the wood. When these rare casks are transported to Yilan County, Taiwan, the intense subtropical climate accelerates the maturation process. The rapid wood extraction coaxes out a complex profile where the salty, mineral-rich influence of the seaside cask beautifully balances Kavalan's signature tropical fruitiness, offering notes of honeydew, vanilla, and light cocoa.

Founded in 2005 by the King Car Group under founder Tien-Tsai Lee, Kavalan Distillery is located in Yuanshan Township within Yilan County, Taiwan. Named after the indigenous Kavalan people of the Yilan plain, the distillery pioneered world-class Taiwanese single malt whisky production using mineral-rich meltwater sourced from the nearby Snow Mountain range.
