While South Australia's Clare Valley is globally renowned for its pristine, bone-dry Rieslings, the region also harbors a quiet, historic love affair with Semillon. Kilikanoon's Barrel Fermented Semillon represents a sophisticated departure from the lean, unoaked styles famously found in the Hunter Valley. Instead, this expression embraces the traditional French technique of barrel fermentation and lees stirring (bâtonnage) in seasoned French oak hogsheads. This meticulous process coaxes out a luxurious, textured mouthfeel, beautifully balancing Semillon's natural, vibrant citrus and lemon curd acidity with complex undertones of toasted brioche, vanilla bean, and soft spice. Sourced from low-yielding vineyards where cool nights preserve essential acidity, this wine is a testament to Kilikanoon's ability to craft white wines of immense texture, structure, and cellaring potential.
