This dramatic temperature shift allows the Shiraz grapes to develop intense, concentrated dark fruit flavors while retaining a vibrant, natural acidity. Matured traditionally in French oak hogsheads, the Covenant Shiraz is celebrated for its seamless integration of rich blackberry and plum characters, complex notes of dark chocolate, and a distinctive mineral-driven, savory finish that reflects the ancient soils of its origin.

Kilikanoon blev grundlagt i 1997 af vinmageren Kevin Mitchell og ligger i den naturskønne Clare Valley i South Australia. Vingården henter sine druer fra historiske, lavtydende gamle vinstokke fordelt over en række forskellige mikroklimaer og jordbundstyper, og huset er dedikeret til at skabe vine med enestående kraft, præcision og regional autenticitet. Kilikanoon har opnået stor international anerkendelse for sine dybt koncentrerede, strukturerede rødvine – heriblandt især flagskibene Oracle Shiraz og Prodigal Grenache – side om side med krystalklare, gemmeværdige Clare Valley Riesling-vine.
