Unlike traditional assemblage, Roederer macerates Pinot Noir grapes from the sunny, clay-limestone slopes of Cumières for several days before adding Chardonnay juice to ferment together. This co-fermentation yields a seamless integration of red fruit structure and citrusy elegance. The Late Release designation signifies that these bottles have been held back in the house's historic chalk cellars for decades, undergoing extended lees contact and post-disgorgement aging. This patience coaxes out tertiary notes of dried forest fruits, warm brioche, and exquisite mineral complexity, echoing the historic craftsmanship that has defined the house for centuries.
