Crafted by the visionary Michel Chapoutier, a pioneer of biodynamic viticulture in the Rhône Valley, 'Adunatio' takes its name from the Latin word for 'union'—symbolizing the harmonious relationship between nature, the winemaker, and the soil. This red wine is produced as a 'sans sulfites ajoutés' (no added sulfur) cuvée, representing a pure, unadulterated expression of the southern Rhône terroir. Typically a classic blend of Grenache and Syrah, the grapes are fermented with indigenous yeasts in concrete or stainless steel tanks to safeguard the vibrant primary fruit. The nose and palate are defined by juicy dark berries, wild garrigue herbs, and a signature touch of cracked black pepper, delivering a rustic yet remarkably clean and lively profile.
