✨ wine.spec_sheet
Hailing from the rolling, sun-drenched hills of the Illasi Valley in Veneto, Cascina San Vincenzo represents Pasqua's dedicated venture into certified organic viticulture. This Amarone della Valpolicella DOCG is crafted from a traditional blend of Corvina, Corvinone, and Rondinella grapes, harvested from a single estate where clay and limestone soils impart a distinct mineral backbone. Following the ancient Veronese 'appassimento' tradition, the grapes are carefully dried in specialized fruit drying rooms (fruttaio) for several months, concentrating their sugars, acids, and flavors. After a slow fermentation, the wine is aged in oak casks, resulting in a deeply complex, velvety red that harmonizes rich notes of dark cherry, dried plum, and cocoa with a refined, sustainable modern philosophy.
