Eschewing modern manipulation, Piuze utilizes a traditional vertical press and ferments the juice using native yeasts in neutral, older oak barrels. This meticulous, non-interventionist approach ensures that the wood never masks the wine's identity. The resulting Grand Cru whites are masterpieces of tension, power, and saline minerality, reflecting the unique microclimates of these ancient slopes with crystalline precision.
