The 'Côte de Bouqueyreaux' is a highly prized, extraordinarily steep sub-parcel within the Bougros Grand Cru climat in Chablis. Boasting an incline of nearly 50 percent and situated directly overlooking the Serein river, this vineyard enjoys optimal southwest exposure and a unique microclimate that mitigates frost. The soil here is a dense composition of Kimmeridgian limestone marl, packed with prehistoric oyster shells (Exogyra virgula), which imparts a profound, saline minerality to the wine. Patrick Piuze sources fruit from ancient vines in this parcel, harvesting entirely by hand due to the sheer steepness of the slope. In the cellar, the juice undergoes spontaneous fermentation with wild yeasts and is aged in neutral wood casks. This traditional, non-interventionist approach yields a Grand Cru Chablis of remarkable power, combining rich, textured stone fruit notes with a driving, laser-like mineral acidity and a long, sea-breeze finish.

Dette anmelderroste boutique-négociant-hus har base i hjertet af Chablis i Bourgogne og blev grundlagt i 2008 af den Montreal-fødte vinmager Patrick Piuze. Hans portefølje høster international anerkendelse for sine præcise, knivskarpe og terroir-drevne fortolkninger af Chardonnay – lige fra karakterfulde Village-aftapninger som Terroir de Courgis til prestigefyldte Premier og Grand Crus som Les Preuses, foruden de friske mousserende vine under hans Val de Mer-etiket.
