The 'Côte de Bouqueyreaux' is a highly prized, extraordinarily steep sub-parcel within the Bougros Grand Cru climat in Chablis. Boasting an incline of nearly 50 percent and situated directly overlooking the Serein river, this vineyard enjoys optimal southwest exposure and a unique microclimate that mitigates frost. The soil here is a dense composition of Kimmeridgian limestone marl, packed with prehistoric oyster shells (Exogyra virgula), which imparts a profound, saline minerality to the wine. Patrick Piuze sources fruit from ancient vines in this parcel, harvesting entirely by hand due to the sheer steepness of the slope. In the cellar, the juice undergoes spontaneous fermentation with wild yeasts and is aged in neutral wood casks.
