Patrick Piuze's 'Terroir de Coteaux' is a brilliant village-level Chablis that highlights the unique character of steep hillside vineyards, or 'coteaux', within the appellation. Sourced from older vines planted on Kimmeridgian limestone soils rich in fossilized marine life, this wine captures the essence of Chablis' ancient geological history. Piuze utilizes spontaneous fermentation with indigenous yeasts and ages the wine in neutral wood barrels, avoiding new oak to preserve the pristine, mineral-driven identity of the fruit. The result is a beautifully textured white wine that pays homage to the historic winegrowing traditions established by Cistercian monks in the region centuries ago, offering a tense, saline, and crystalline expression of northern Burgundy.

Founded in 2008 by Montreal-born vigneron Patrick Piuze, this acclaimed boutique négociant is based in the heart of Chablis, Burgundy. After honing his craft alongside renowned regional icons like Jean-Marc Brocard and Jean-Marie Guffens, Piuze established his eponymous label to showcase the hyper-specific geological nuances of Chablis' famed Kimmeridgian soils. Partnering closely with local growers of older vines, he employs meticulous hand-harvesting, spontaneous wild-yeast fermentations, and aging in seasoned neutral oak to avoid masking varietal character.
