Crafted by the acclaimed Chablis producer Patrick Piuze, this 'Non Dosé' sparkling wine is a brilliant extension of his minimalist, terroir-driven philosophy into the realm of sparkling Burgundy. Sourced from cool-climate vineyards in the Yonne department, this cuvée is made in the traditional method with zero dosage added at disgorgement. By eschewing the traditional sweetening makeup, Piuze allows the raw, crystalline purity of northern Burgundian Chardonnay to take center stage. The wine is celebrated for its laser-like acidity, intense chalky minerality, and pristine citrus notes, echoing the ancient Kimmeridgian soils of its heritage and offering a bone-dry, incredibly refreshing drinking experience.
