Val de Mer is a collaborative project established by Chablis winemaker Patrick Piuze, focusing on expressing the cooler, northern limits of Burgundy. This Non Dosé sparkling wine is crafted using the traditional method from vineyards planted on the region's signature Kimmeridgian limestone and clay soils. By omitting the addition of a sweetening dosage liqueur before final corking, this cuvée offers an incredibly pure, bone-dry expression of northern Burgundian terroir. It captures the tension, vibrant energy, and intense chalky minerality characteristic of the Yonne department, showcasing a laser-like acidity balanced by delicate autolytic notes from lees aging.
