Crafted by the visionary Patrick Piuze, the 'Vallée de Sébillon' is a stunning exploration of Chablis's intricate village-level terroirs. Sourced from a specific, sheltered valley on the left bank of the Serein river near the hamlet of Milly, this cuvée captures a unique microclimate. Here, the Kimmeridgian clay-limestone soils are slightly deeper, imparting a richer, more textured mouthfeel to the Chardonnay than is typical for the region, while maintaining a core of electric acidity. Piuze's non-interventionist philosophy shines through: the grapes are hand-harvested and gently pressed, followed by spontaneous fermentation and aging in neutral wood casks. This ancient, respectful method coaxes out a beautiful tension between ripe citrus fruit, white flowers, and a profound, saline minerality reminiscent of crushed oyster shells, paying homage to the prehistoric marine basin that defines the Chablis region.

Founded in 2008 by Montreal-born vigneron Patrick Piuze, this acclaimed boutique négociant is based in the heart of Chablis, Burgundy. After honing his craft alongside renowned regional icons like Jean-Marc Brocard and Jean-Marie Guffens, Piuze established his eponymous label to showcase the hyper-specific geological nuances of Chablis' famed Kimmeridgian soils. Partnering closely with local growers of older vines, he employs meticulous hand-harvesting, spontaneous wild-yeast fermentations, and aging in seasoned neutral oak to avoid masking varietal character. His portfolio is celebrated worldwide for its pure, razor-sharp, and terroir-driven Chardonnay expressions, ranging from distinctive village-level bottlings like Terroir de Courgis to prestigious Premier and Grand Crus like Les Preuses, alongside crisp sparkling wines crafted under his Val de Mer label.
