Sourced primarily from the biodynamically farmed Grimm's Bluff Vineyard in the warm Happy Canyon of Santa Barbara AVA, this wine benefits from the dramatic diurnal temperature shifts of the region. Happy Canyon's gravelly loam soils and intense afternoon heat, cooled by evening marine breezes, allow Sauvignon Blanc to achieve optimal phenolic ripeness while retaining vibrant, electric acidity. In the cellar, Paul Lato employs traditional French techniques, including fermentation and aging in a combination of French oak barrels and stainless steel, accompanied by regular lees stirring. This meticulous process imparts a luxurious, creamy texture that beautifully balances the grape's inherent citrus and mineral drive, resulting in a sophisticated, age-worthy expression that nods to the great graves of Bordeaux while celebrating California's radiant sunshine.
