Paul Lato's Le Jardin Secret Sauvignon Blanc is a stunning testament to the potential of Santa Barbara County for producing world-class, textured white wines. Sourced primarily from the biodynamically farmed Grimm's Bluff Vineyard in the warm Happy Canyon of Santa Barbara AVA, this wine benefits from the dramatic diurnal temperature shifts of the region. Happy Canyon's gravelly loam soils and intense afternoon heat, cooled by evening marine breezes, allow Sauvignon Blanc to achieve optimal phenolic ripeness while retaining vibrant, electric acidity. In the cellar, Paul Lato employs traditional French techniques, including fermentation and aging in a combination of French oak barrels and stainless steel, accompanied by regular lees stirring. This meticulous process imparts a luxurious, creamy texture that beautifully balances the grape's inherent citrus and mineral drive, resulting in a sophisticated, age-worthy expression that nods to the great graves of Bordeaux while celebrating California's radiant sunshine.

Dette eksklusive boutique-vinhus på Californiens Central Coast blev grundlagt i 2002 af Paul Lato, en polskfødt tidligere sommelier fra Toronto. Etableringen skete i kølvandet på et tidligt mentorskab hos Jim Clendenen fra Au Bon Climat samt uvurderlig opbakning fra Bob Miller fra Bien Nacido. Lato råder ikke over egne marker, men opkøber i stedet druer fra nøje udvalgte parceller i førsteklasses, kølige og kystnære terroirs. Disse dækker over anerkendte appellationer som Santa Maria Valley, Sta. Rita Hills, Santa Ynez Valley, Santa Lucia Highlands og Los Carneros.
