To preserve its delicate pale pink hue and vibrant aromatics, the grapes are harvested during the cool night hours, followed by a gentle pneumatic pressing and temperature-controlled fermentation in stainless steel. Rooted in a viticultural heritage dating back to 1892, Domaines Paul Mas in its modern form was established in 2000 by visionary winemaker Jean-Claude Mas near Pézenas in the Languedoc region of southern France.
