Hailing from the sun-drenched hillsides of the Pays d'Oc, the Pinot Noir 'Les Tannes en Occitanie' represents a harmonious marriage between a classic cool-climate grape and the warm Mediterranean terroir of southern France. The name 'Les Tannes' pays homage to the local clay-limestone soils that define this landscape, where wild herbs like rosemary and thyme grow alongside the vines. To craft a balanced Pinot Noir in this warm climate, the grapes are harvested at night to preserve freshness and delicate aromatics. Following a meticulous destemming and cool maceration, a portion of the wine is aged in French and American oak barrels for several months, while the remainder rests in stainless steel. This dual aging process preserves the vibrant, juicy red fruit character of the grape while imparting subtle notes of sweet spice and vanilla.
