Domaines Paul Mas Viognier is a vibrant expression of the Languedoc's sun-drenched terroir, crafted under the philosophy of 'Luxe Rural' by Jean-Claude Mas. The Viognier grape, which famously neared extinction in the mid-20th century, has found a welcoming second home in the clay-limestone soils of the Pays d'Oc. Here, the Mediterranean breezes temper the summer heat, allowing the grapes to develop their signature aromatic intensity while retaining balanced acidity. To craft this cuvée, the grapes are harvested at optimal ripeness, destemmed, and gently pressed. A portion of the blend is typically fermented and aged in oak barrels to introduce a subtle creaminess and vanilla complexity, while the majority is vinified in stainless steel to preserve the grape's intense floral, peach, and apricot characteristics.

Rooted in a viticultural heritage dating back to 1892, Domaines Paul Mas in its modern form was established in 2000 by visionary winemaker Jean-Claude Mas near Pézenas in the Languedoc region of southern France. Driven by the philosophy of 'Luxe Rural'—creating accessible, everyday luxury wines—the estate seamlessly marries centuries-old French tradition with dynamic, New World-inspired winemaking techniques.
