Domaines Paul Mas Viognier is a vibrant expression of the Languedoc's sun-drenched terroir, crafted under the philosophy of 'Luxe Rural' by Jean-Claude Mas. The Viognier grape, which famously neared extinction in the mid-20th century, has found a welcoming second home in the clay-limestone soils of the Pays d'Oc. Here, the Mediterranean breezes temper the summer heat, allowing the grapes to develop their signature aromatic intensity while retaining balanced acidity. To craft this cuvée, the grapes are harvested at optimal ripeness, destemmed, and gently pressed. A portion of the blend is typically fermented and aged in oak barrels to introduce a subtle creaminess and vanilla complexity, while the majority is vinified in stainless steel to preserve the grape's intense floral, peach, and apricot characteristics.

Established in 2000 by fourth-generation vigneron Jean-Claude Mas, Domaines Paul Mas has become a preeminent force redefining modern viticulture in the Languedoc. Blending centuries of familial heritage dating back to 1892 with a contemporary New World dynamism, the estate champions a philosophy Jean-Claude terms 'rural luxury'—delivering site-expressive, terroir-focused wines of tremendous value and character. The extensive vineyard holdings span diverse terroirs across Pézenas, Montagnac, Limoux, and Terrasses du Larzac, anchored by clay-limestone soils, river gravels, and fossil-rich deposits under the moderating influence of Mediterranean sea breezes and cooling Tramontane winds.
