Pax Mahle's exploration of Gamay Noir in California has been instrumental in the grape's modern renaissance in the state. The Alta Monte bottling, translating to 'high mountain,' pays homage to the high-elevation, cool-climate sites where these vines thrive, notably in the rugged terrain of Mendocino County. Influenced by traditional Beaujolais techniques, Pax utilizes whole-cluster fermentation and carbonic maceration in concrete and neutral wood. This approach coaxes out the grape's signature bright, crunchy red fruit, wild alpine herbs, and a distinct stony minerality. It tells a story of California's diverse microclimates, proving that mountain-grown Gamay can rival its French ancestors in complexity and sheer drinkability.

Pax Wines blev grundlagt i 2000 af Pax og Pam Mahle og er et anerkendt vinhus beliggende i Sebastopol i Sonoma County, Californien. Vingården er kendt som en pioner inden for 'New California'-bølgen og har særligt fokus på kystnære terroirs med køligt klima i Sonoma og Mendocino County. Hos Pax arbejder man ud fra en minimalistisk, klassisk europæisk tilgang til vinfremstillingen med brug af helklasegæring, vildgær samt modning på neutrale franske egetræsfade og betontanke for at bevare renhed og friskhed.
