Sourced from the cool-climate, high-altitude vineyards of the Adelaide Hills, this wine was conceived to challenge the heavily oaked, flabby Chardonnay styles of the late 20th century. The 1995 vintage achieved legendary status, winning major international trophies and proving that South Australia could produce world-class, elegant, and complex cool-climate whites. Crafted using hand-picked fruit, wild fermentation in French oak barriques, and partial or full malolactic fermentation with regular yeast lees stirring (battonage), it strikes a masterclass balance between rich, nutty, and mealy complexity and a vibrant, mineral-driven citrus acidity.
