Pereira D'Oliveira's 10-Year-Old Dry Madeira is a masterclass in tension, acidity, and oxidative complexity, crafted primarily from the high-acid Sercial grape grown on the steep, volcanic terraces of Madeira. This wine undergoes the traditional canteiro aging process, where it rests in seasoned oak casks in the warm lofts of Funchal, gently concentrating over a decade. This slow, natural heating coaxes out savory, nutty, and citrus-peel complexities while preserving the searing, electric acidity that defines the dry Madeira style. Historically, these dry styles were favored as aperitifs in the grand dining rooms of Europe and the American colonies, celebrated for their ability to stimulate the palate and survive indefinitely in bottle.
