The Hors-S rie collection by Piper-Heidsieck represents a bold, creative endeavor initiated by Chef de Cave milien Boutillat. Designed as a bridge between the house's rich history and contemporary craftsmanship, this ultra-limited series features historic, late-disgorged library vintages that have been aged on their lees for decades. Each release, such as the inaugural 1971 or the subsequent 1982, showcases the extraordinary longevity and freshness that the house's Pinot Noir and Chardonnay-dominant blends can achieve. These Champagnes undergo a fresh disgorgement and receive a custom dosage, resulting in a magnificent tension between mature, autolytic complexity—characterized by notes of toasted brioche, dried fruits, and truffle—and a vibrant, youthful acidity.
