La Faîte Rouge is the jewel of the Saint-Mont appellation, crafted by Plaimont as a tribute to the ancient custom of local winemakers who would bury their finest bottles in clay to preserve them. Each year, a prestigious jury of sommeliers and wine writers gathers to select the final blend from the finest parcels of Tannat, Pinenc, and Cabernet Sauvignon grown on the region's unique variegated clays and limestone soils. The wine is aged in French oak barrels, resulting in a powerful yet remarkably elegant expression of the Pyrenean terroir. In keeping with tradition, each bottle of La Faîte is uniquely adorned with a genuine wooden label and sealed with wax, symbolizing its deep connection to the forests and soils of Gascony.

Plaimont blev grundlagt i 1979 under den visionære André Duboscs ledelse, da passionerede vinbønder fra Plaisance, Aignan og Saint-Mont i hjertet af Gascogne i det sydvestlige Frankrig forenede deres kræfter. I dag er kooperativet et fyrtårn for den regionale kulturarv med et særligt fokus på at genoplive og bevare sjældne, oprindelige druesorter som Tannat, Gros Manseng, Petit Manseng og Pinenc. Vinmarkerne breder sig over Pyrenæernes forbjerge og dækker historiske parceller i Saint Mont, Madiran, Pacherenc du Vic-Bilh og Côtes de Gascogne.
