Hailing from the wind-swept clay and limestone hillsides of the Saint Mont appellation, the '3 Chevaliers' Blanc is a tribute to the legendary knights and musketeers of Gascony. Crafted by the dedicated growers of the Plaimont cooperative, this white wine showcases the unique microclimate of the Pyrenean foothills, where cool mountain breezes preserve vibrant acidity. The wine is typically fermented in temperature-controlled stainless steel tanks and aged on its fine lees to develop a rich, textured mouthfeel that balances its bright, citrusy core. It represents a modern revival of ancient local viticultural traditions, drawing on centuries of monastic winemaking heritage centered around the historic monastery of Saint-Mont.

Plaimont blev grundlagt i 1979 under den visionære André Duboscs ledelse, da passionerede vinbønder fra Plaisance, Aignan og Saint-Mont i hjertet af Gascogne i det sydvestlige Frankrig forenede deres kræfter. I dag er kooperativet et fyrtårn for den regionale kulturarv med et særligt fokus på at genoplive og bevare sjældne, oprindelige druesorter som Tannat, Gros Manseng, Petit Manseng og Pinenc. Vinmarkerne breder sig over Pyrenæernes forbjerge og dækker historiske parceller i Saint Mont, Madiran, Pacherenc du Vic-Bilh og Côtes de Gascogne.
