The late Henry-Frederic Roch applied the same uncompromising methods to his whites as his legendary reds: whole-cluster pressing, fermentation with indigenous yeasts, and aging on its lees in oak barrels with absolutely no added sulfur. This minimal-intervention approach yields a wine of incredible texture, energy, and complexity, characterized by a slightly cloudy appearance, vibrant orchard fruit, wild herbal notes, and a distinct saline minerality that speaks directly to the limestone soils of the region.
